Happy St. Patrick’s Day
For dinner tonight, traditional Irish (-American) corned beef and cabbage, and a mug of Guinness Draught.

So good…

Slow cookers make corned beef easy. I just bought a pre-cured corned beef brisket from the supermarket (very cheap this time of year), rinsed it and slow cooked it on low all day with a little fresh water and the spice packet contents. Then I cooked the cabbage in the brisket’s juices when I got home — microwaved in a covered dish for seven minutes on high. I fried some potatoes to finish out the meal. The beef was fork-tender and delicious.
